Pork Loin Roast with Apricot Glaze
Serves 2-3.
A cozy end-of-winter crock pot meal to take you into spring. Pour some of the extra sauce over the pork and rice before serving.

1 pork loin roast (mine was approximately 2.5 lbs.)
16 oz of Apricot Jam 15.75 oz.
1 can chicken broth
2-3 tablespoons of Dijon-style mustard
1 large onion, chopped
Place pork loin in crock pot. Combine preserves, broth, mustard, and onion; pour over meat.
Cook on low for 9-10 hours; high for 4-5.
Serve over rice.
