Mini BBQ Cheddar Meatloaves
Mini BBQ Cheddar Meatloaves
Serves 8.
The original recipe calls for 1 whole onion per pound of beef, but I thought the distribution was much better when everything else besides the onion was doubled. A tasty twist on traditional meatloaf. We all loved it.
Slightly adapted from: Iowa Girl Eats
1 large sweet onion
2 tablespoons butter
Salt
2 lbs. lean ground beef
2 eggs, whisked
2 tablespoons Worcestershire sauce
1/2 cup + 4 tablespoons BBQ sauce, divided
1/2 cup panko bread crumbs
Pepper
4 oz. shredded cheddar cheese (about 1 cup)
Cut onion in half then each half into thin slices. Melt butter in a large skillet or pot over medium heat then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. Set aside to cool slightly.
Preheat oven to 425 degrees. In a large bowl combine ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, panko bread crumbs, dash of pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide mixture into 4 equal-sized portions then form into loaves on a foil-lined, non-stick-sprayed baking sheet. Spread 1 Tablespoon BBQ sauce over each loaf then bake for 20-30 minutes, or until no longer pink in the center.

Makes 18-20 muffins.
Here's a winner recipe -- a muffin that's healthy and the whole family loves. Enough sweetness from the honey, yet plenty of healthy ingredients to start your day right. The wee one loves these for breakfast and as an after-nap snack, and I love that I can make them, freeze them, and pull them out one by one for a wholesome, homemade treat.

2.5 cups old fashioned oats
1 cup plain low fat greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 tbsp ground flax seed
1 tsp vanilla
2 ripe bananas
Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line muffin tins with silicone or foil liners.
Place the oats in the food processor and pulse for about 10 seconds. Add remaining ingredients to the food processor. Process until everything is mixed together and oats are smooth.
At this point in the process, you can separate the batter into different bowls, adding dark chocolate chips, nuts, blueberries, or whatever you want to make a variety of muffins. Or you can add one ingredient to the entire batter. Or, like I prefer them, leave them plain! They are still great!
Divide batter among cupcake liners, and bake for 18-20 minutes (mine only took 14-15 minutes), or until toothpick comes out clean.

Spaghetti with Chicken Meatballs
Spaghetti with Chicken Meatballs
Serves 4-6.
A healthier twist on the traditional classic, especially if you serve it with whole wheat pasta, but still just as satisfying.

1 lb. ground chicken
2 eggs
1/4 medium onion
1 t. seasoned salt
1/2 t. pepper
1 t. crushed red pepper
1/2 t. garlic powder
1 t. Italian seasoning
1/2 c. crushed Ritz cracker crumbs
1/4 c. Parmesan cheese
Spaghetti, cooked to package directions
Your favorite pasta sauce
Preheat oven to 350 degrees.
In a large bowl, combine the first 10 ingredients. Take mixture and roll into medium or small meatballs (about 12). Place meatballs on a pan coated with nonstick spray (especially if your ground chicken is very lean). Bake for 40 minutes.
Serve over spaghetti with your favorite sauce.

Makes about 20 squares.
An easy, tasty treat. I think this would also taste great with white chocolate chips or sprinkles in place of the M&Ms.

1 box yellow cake mix (I used Betty Crocker)
1 small box instant vanilla pudding
1/4 cup water
3/4 cup vegetable oil
2 eggs
1 cup M&M's
Preheat your oven to 350 degrees.
Combine cake mix, pudding, water, vegetable oil, eggs and chips or M&M's in large bowl.
Pour the batter (it's going to be thick) into a greased 9x13 baking dish. I sprayed my dish with nonstick cooking spray which worked well.
Bake your bars for 25 minutes.
It may look sort of raw in the middle but if the edges are just golden and starting to get crispy, it's probably perfect.

Serves 12-20, depending on how you cut it.
Light, summery, and perfect with a dollop of whipped cream or vanilla ice cream. This is so easy, you have no reason NOT to make it.
Slightly adapted from: Dawn's Quilt Corner
1 box angel food cake
20-oz. can crushed pineapple, with juice
1-1/2 cups flaked coconut
Preheat oven to 350 degrees.
Stir together all ingredients in a mixing bowl. Pour into a 13x9 baking pan that has been coated with nonstick spray. Bake for 30 minutes. Cool. Serve with ice cream or whipped cream.

These are seriously so good! Here are some tips from the original blogger:
1. This recipe calls for diced green chilies. Don't let that fool you, these are NOT spicy in the least. My 3 year old and 1 year old love them.
2. If you would like, you can substitute Greek yogurt for the sour cream in the recipe. It is a 1 for 1 substitute.
3. If you cook your chicken first (rather than using a rotisserie chicken), you may wan to add some spices to give it extra flavor. I like the chicken to have good flavor. I tend to cook my chicken in the crock pot with some ground cumin, garlic powder, and ground black pepper.
4. You can make this ahead and keep it in the fridge up to 24 hours. Just put it in the oven and increase the time a bit. You will want to make sure they are heated through.
5. This sauce does not freeze well. Then enchiladas themselves freeze really well. I freeze a few pans of them double wrapped in foil and then I just make the sauce the day of. Thaw them first, add the sauce, cook according to original instructions.
6. Yes, your friends and family will like their plate and ask for you to bring them to every gathering from here on out.

10 soft taco tortillas
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream - use Greek yogurt instead!
1 (4 oz) can diced green chillies
Preheat oven to 350 degrees. Grease a 9x13 pan.
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
Pour over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese.

Stromboli with Sausage, Peppers, & Onions
Serves 6.
This is a great stomboli recipe, and wonderful for entertaining because it's easy to eat without utensils.
Slightly adapted from: Pillsbury
1/2 lb. ground sausage
13.8-oz. can refrigerated classic pizza crust
1/4 c. pizza sauce
1 c. shredded mozzarella cheese
1/2 c. chopped green and/or red bell pepper,
1/4 t. dried Italian seasoning
Heat oven to 400°F. Spray cookie sheet with nonstick cooking spray. Brown ground beef in medium skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain. Set aside.
Unroll dough; place on sprayed cookie sheet. Starting at center, press out dough with hands to form 12x8-inch rectangle.
Spread sauce over dough to within 2 inches of long sides and 1/2 inch of short sides. Place cooked ground beef lengthwise down center, forming 3-inch-wide strip and to within 1/2 inch of short sides. Top with cheese, bell pepper and Italian seasoning. Fold long sides of dough over filling; press edges to seal.
Bake at 400°F. for 15 to 20 minutes or until crust is golden brown.

1 can refrigerated pizza dough (such as Pillsbury)
1/2 cup pizza sauce1 1/2 cups grated mozzarella cheese9 slices salami6 slices proscuitto1 egg, beatendried parsley & parmesan cheese {optional}extra pizza sauce for dipping {optional}
Preheat oven to 500 degrees. Line large rimmed cookie sheet with parchment or spray lightly with non-stick cooking spray.
Spread pizza dough out on baking sheet to be approximately 10x16. Spread pizza sauce over 2/3's of the dough lengthwise, leaving a 3x16 rectangle of plain dough along one of the edges. Top sauce with half the grated cheese, salami and prosciutto. Top with remaining cheese.
Brush the plain strip of dough with the egg. Fold in the sides about an inch and brush them with egg. Roll up like a jelly roll lengthwise starting along the long edge of dough topped with all the fillings and ending with the plain strip of dough on the bottom of the roll. Brush the entire stromboli with egg and gently cut slats in the top of the dough every 1-2 inches.
Sprinkle parsley and cheese over top and bake 8-10 minutes or until bubbly and golden. Remove from oven, cool 5 minutes and slice into pieces. Serve with more pizza sauce.

3 ripe bananas
2 c. rolled oats1/3 c. applesauce1 tsp. vanilla extract1 tbsp. ground flax1/2 c. dried cherries, raisins, or a mix of both
Preheat oven to 350 degrees. Using a fork, mash the bananas in a bowl. Stir in oats, applesauce, dried cherries, flax and vanilla extract. Mix batter well. Drop by rounded spoonfuls onto a lined cookie sheet. Bake for 20 minutes.

Using an electric mixer, cream butter, brown sugar, granulated sugar, eggs and vanilla together. Stir in flour, baking soda and salt. Add remaining ingredients and mix well. Scoop onto pan. Bake for approximately 9 minutes. Cool on baking sheet or cooling rack.

1 8-oz. can crescent rolls
1 lb. ground beef
1 packet taco seasoning
1 can Rotel
1 c. sour cream (or greek yogurt)
1 c. shredded cheddar cheese
1-2 c. crushed tortilla chips
Preheat oven to 350 degrees.
Press crescent roll dough into a greased pie plate. It won't look pretty, but it doesn't need to.
Meanwhile, brown ground beef. Drain and stir in taco seasoning, Rotel, and sour cream. Top crescent roll crust with ground beef mixture. Top with shredded cheddar and crushed tortilla chips.
Bake for 30 minutes COVERED with foil. Then, remove foil and bake an additional 15 minutes. Remove from oven and allow to cool for 15 minutes more before cutting and serving.

2 cups Cooked Chicken
3 cups Dry Spaghetti, Broken Into Two Inch Pieces
2 cans Cream Of Mushroom Soup
2 cups Grated Sharp Cheddar Cheese
1/4 cup Finely Diced Green Pepper
1/4 cup Finely Diced Onion
1 jar (4 Ounce) Diced Pimentos, Drained
2 cups chicken broth From Pot
1 teaspoon Lawry's Seasoned Salt
1/8 teaspoon (to 1/4 Teaspoon) Cayenne Pepper
Salt And Pepper, to taste
1 cup Additional Grated Sharp Cheddar Cheese
Cook spaghetti until al dente. Do not overcook. When spaghetti is cooked, drain and combine with remaining ingredients except additional 1 cup sharp cheddar.
Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

A heart-breaking read, but one I enjoyed. It had my attention from the start and kept it all the way through. This is a quick read... one I read in a week or two.

Vermont Maple Bread Pudding
Vermont Maple Bread Pudding
Serves 6-8.
A rich, tasty breakfast. Serve with fresh fruit.
Slightly adapted from: Pillsbury
12-14 oz. loaf crusty French bread, cut into 2" cubes
6 eggs
1/2 c. maple syrup
3/4 c. sugar
1-1/2 t. baking powder
1 pint (2 c.) half-and-half
1 c. milk
1/2 c. cream cheese frosting
1 container (6 oz.) vanilla yogurt
- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. Place cut-up bread in large bowl.
- In another large bowl, slightly beat eggs. Reserve 1 tablespoon of the syrup in small microwavable bowl; add remaining syrup to eggs. Stir in sugar, baking powder, half-and-half, and milk until well blended. Pour mixture over roll pieces in bowl; stir to coat well. Pour mixture into pan, pressing bread into liquid with back of spoon. Let stand 5 minutes; press down bread again.
- Bake 45 to 55 minutes or until top is golden brown and knife inserted in center comes out clean. Cool 20 minutes before serving.
- To reserved tablespoon syrup, stir in frosting and yogurt. Microwave on High about 20 seconds or until melted. Stir; pour over warm bread pudding and spread to cover.

A fun, delicious meal that's perfect for Friday night. If you use baked tortilla chips, you can make it healthier.
tortilla chips
2 chicken breasts, cooked and shredded
2 c. shredded cheddar cheese
1 c. black beans
1 c. diced tomatoes
1/2 c. diced red onion
sour cream
guacamole
cilantro
lime
Preheat oven to degrees 325 degrees.
Spread tortilla chips over a large baking sheet. Top with cooked chicken, shredded cheese, and black beans. Bake for 15-20 minutes.
Remove from oven and top with tomatoes, red onion, sour cream, guacamole, cilantro, and freshly-squeezed lime juice. Enjoy!

No-Peek Beef Tips
Serves 6.
I added some additional veggies to this extremely easy dinner. Perfect for those cold mid-winter nights. This is a great man meal, and I enjoyed it too!
Slightly adapted from: Mommy's Kitchen
2 lbs. beef tenderloin tips or stew meat (I used stew meat)
1 10.5 oz can cream of mushroom soup
1 packet brown gravy mix
1 packet lipton dry onion soup mix
1/2 fresh chopped mushrooms
1/2 onion, coarsely chopped
1/2 cup chopped carrots
1 cup water
Add beef and veggies to a 9 x 13 inch pan.In a large bowl mix the remaining ingredients together and pour over the meat.
Cover tightly with foil and bake at 300 degrees for 3 hours.
Do not remove foil until baking time is complete.
Serve over rice, mashed potatoes or egg noodles. I served over spaetzle.

Hand Print Ornament
I made this last Christmas with a dear friend of mine (thanks, Lacey!), using the little girl's handprint. At that time she was only 4 months old. Wow, time flies. I'm so glad I did, though, because it's a wonderful keepsake that we will treasure more and more with each year that passes. They also make great gifts -- the grandparents will so happy to recieve one too!
Things you'll need:
-- Plain glass ornament
-- Acrylic paint
-- Glitter
-- Ribbon
-- Paint pen
-- A helping hand (especially if you have a real little one who can't follow simple directions)
Since acrylic paint stains, first strip down your child to his/her diaper or underwear. Or you can put them in an art shirt. :)
Set up shop in your kitchen or a room with a sink, so you have the option to quickly rinse off any "mistake" attempts.
Dip child's hand in paint, or "paint" it on their palm with a paint brush. Spread their fingers and place it onto the ornament. Remove.
Sprinkle hand print with glitter and let dry. Using the paint pen, inscribe on the other side to remember what year it was made and which child, if applicable, the hand print belongs to. Tie a ribbon to the top and hang it on your tree.

Happy Thanksgiving to you and yours! I hope you have a wonderful day celebrating all you have to be thankful for.
Just like the title implies, this is a moist pumpkin bread.... and it has a sugary sweet cinnamon topping. Yum!
Source: Food
1 cup brown sugar
2 eggs
1/2 cup vegetable oil
1/3 cup water
1 (15 ounce) pumpkin puree
1 3/4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
TOPPING:
1 tablespoon butter
1/4 cup brown sugar
3 tablespoons milk
1/4 cup pecans, chopped
In a medium size bowl beat eggs and mix with sugar, oil, water and pumpkin.
In another bowl mix flour, baking soda, baking powder, salt, nutmeg, cinnamon and pumpkin pie spice. Combine wet ingredients with dry ingredients only until just blended. Do NOT overmix.
Pour into a greased and floured loaf pan. This bread fits perfectly in an 8.5 x 4.5 loaf pan. Bake in a 325 degree oven for 50 to 60 minutes.
For topping: In a small saucepan mix butter, brown sugar and milk. Boil only 2 1/2 minutes while stirring constantly. Immediately drizzle on top of loaf. Sprinkle with chopped pecans and press pecans lightly into topping.
Wrap and store until next day for serving.

Last year, The Mister and I invited our parents over for a wine dinner. We had received a magnum bottle of wine as a gift from a friend of the family who loves and knows his wine. Needless to say, this bottle was old. And special. Nice. Really nice. And it required a fancy night on which to open it.
So we planned a special meal, and enjoy it we did, with who better than our dear parents. The little one went to bed shortly after appetizers, and we dined on beef tenderloin by candlelight, sipping the delicious cab.
Dinner menu:
Beef tenderloin with mushroom sauce
Roasted asparagus
Garlic mashed potatoes
Salad

Cowboy Casserole

Don't be grossed out. This is a family classic in some parts of our nation. It's comfort food, and it's good, and it is truly a family pleaser when it comes to what your kids love. So whip it up -- even the night before if you want -- and bake for dinner this week.

1 1/2 pounds ground beef
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained (I used 1-1/2 cups thawed frozen corn instead)
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (such as Ore-Ida Crispy Crowns)
If you can, let the tater tots sit on the counter to defrost for an hour or so. The original recipe uses frozen tater tots, but allowing them to thaw for a bit seems to help the cooking process.
In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.
In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.
Grease a 9x13 inch baking dish. Layer half of the tater tots on the bottom, pour the hamburger mixture over the top and then layer with the other half of the tater tots. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.

Spicy Chicken Soup with Wild Rice

The original name of this recipe is Chicken and Wild Rice soup, but the soup it made was a far cry from what I was envisioning. The amount of rice was far too small to be considered a main part of the title. I need to keep seeking for the soup I'm looking for, but this was still a good soup for a cool day. And since it's a crock pot recipe, it simmers all day while I'm out and about doing other things. It packs some heat, so hopefully you like spicy soups!

1 TBSP olive oil
1 red bell pepper, seeded and diced
1 onion, diced
1-3 jalapeno peppers, seeded and diced
kosher salt and pepper
2 cloves of garlic, minced
1 1/2 tsp cumin
1 tsp oregano
1 1/2 lbs of boneless, skinless chicken
1 (8 oz) can green enchilada sauce
1 (4 oz) can of diced green chiles
1/3 cup wild rice
4 cups chicken stock
1 TBSP cornstarch
2 TBSP milk or water
Heat olive oil in a large skillet. Add the bell pepper, onion, jalapeno peppers and season with salt and pepper. Saute for 6-7 minutes then add the garlic, cumin and oregano. Saute for another minute or two.
Pour skillet contents into crockpot and add the remaining ingredients, except for the cornstarch and milk/water. Cook on low for 5-7 hours. Shred chicken with two forks. Mix cornstarch into cold milk/water and add to crockpot. Return setting to high and cook for another 30 minutes or until thick and bubbly.

Thanksgiving is in one week! And I think you should consider adding this recipe to your line-up. For breakfast on Thanksgiving morning... or before you head out shopping on Friday... or just for general snacking throughout Thanksgiving day. If you put them out, people will eat them. This is a fantastic recipe... delicious!!! I made them as donut holes in a mini muffin pan, but see the original recipe, linked below, for instructions on using a mini donut pan.
I also made a pretty big goof-up, but, in my opinion, it didn't hurt the overall taste. :) Instead of dipping the donut holes in the melted butter, I actually dumped the melted butter all over the donut holes and then covered them in the cinnamon sugar mixture before shaking to coat. I ended up with a bunch of very buttery, gooey, cinnamony-sugary delicious little balls. I wouldn't say it was a bad mistake, but I may try making them "correctly" next time for a neater bite. :)

For Donuts:

1/2 cup brown sugar
1 egg
1 1/2 teaspoon vanilla extract
3/4 cup canned pumpkin
1/2 cup milk
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoons ground cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg
1 1/2 teaspoon vanilla extract
3/4 cup canned pumpkin
1/2 cup milk
For Coating:
1/2 cup butter, melted
2/3 cup sugar
1-2 tablespoons cinnamon (more if you're a cinnamon lover)

Preheat oven 350 F. Grease a mini muffin pan and set aside.
In a bowl, mix flour, baking powder, salt and spices together and set aside.
In a large bowl (or the bowl of an electric mixer fitted with the paddle attachment) whisk together oil, brown sugar, egg, vanilla, pumpkin and milk until combined. Slowly add the dry ingredients into the mixture and stir until just combined, careful not to over mix.
Fill each mini muffin cup, 2/3 full, with the batter. The donut cups should be fairly full, but not overflowing. Bake for 10-12 minutes, until donuts spring back when gently pressed. Turn donuts out onto a wire rack and allow to cool for a few minutes.
While the donuts are cooling, melt butter in one bowl and combine the sugar and cinnamon in another. When donuts are still hot (but not too hot to touch), quickly dip each donut in melted butter, then coat in the cinnamon-sugar mixture. Serve immediately.
*Note: If you're not going to serve the donuts immediately, you can bake them up to a day in advance and store them in an airtight container. Do not coat them in the butter/cinnamon-sugar mixture until just before serving or they may get soggy.

Great book. I really enjoyed this. It had my attention from only a few pages in, and held it all the way through. Just a good, simple novel that makes you think enough, without being overly challenging on the mind.

Teriyaki Meatballs
Teriyaki Meatballs
Makes about 15 meatballs.
A fun twist on traditional meatballs for the Asain food-lover in your household!

Meatball ingredients:
1 lb. ground pork
1 large egg
1/2 cup plain breadcrumbs
1 clove garlic, minced
2 inches fresh ginger
1/2 tsp soy sauce
2 whole green onions
10-15 cranks freshly cracked black pepper
Teriyaki glaze ingredients:
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup water
1/2 T. toasted sesame oil
1 T. rice vinegar
2 inches fresh ginger
2 T. corn starch
1 T. sesame seeds
Rice bowl ingredients:
2.5 cups dry jasmine rice
3.75 cups water
2 whole green onions
Preheat the oven to 400 degrees. Place the ground pork in a large bowl. Peel the ginger and then grate it using a small holed cheese grater into the bowl. Mince the garlic, slice the green onions, and add them to the bowl. Also add the egg, breadcrumbs, soy sauce, and black pepper. Mix these ingredients really well until it is all evenly combined (clean hands work best).
Cover a baking sheet with foil. Roll the meatball mixture into small balls, about one tablespoon each. You should yield about 30 meatballs. Place the meatballs on the baking sheet as you roll them. Bake in the preheated oven until golden brown (about 35-40 minutes).
While the meatballs are in the oven, begin cooking the rice according to the package directions: Place the rice and water in a medium pot, cover, and bring to a rapid boil over high heat. As soon as it reaches a full boil, turn the heat down to the lowest setting. Allow to simmer on low for 20 minutes, then turn the heat off and let the rice rest, undisturbed, until the rest of the meal is complete. The rice will continue to steam even after the heat is turned off, so don't remove the lid.
While the meatballs are in the oven, also prepare the teriyaki glaze. In a medium pot combine the soy sauce, water, brown sugar, rice vinegar, and sesame oil. Peel and grate the ginger into the pot. Heat over a low flame until the brown sugar is dissolved (just a few minutes).
Dissolve the cornstarch in just enough water to make it pourable. Pour it into the pot with the glaze ingredients. Turn the heat up to medium high, stir and cook until thickened. It should thicken as soon as it begins to simmer. Once thickened, add the sesame seeds.
When the meatballs come out of the oven, transfer them from the baking sheet into the pot with the glaze. Stir to coat. Fluff the rice with a fork. Build the bowls by placing one cup of rice in a bowl, add five meatballs and a couple of spoons of extra teriyaki glaze, then sprinkle a few sliced green onions over top.
