Pumpkin Cupcakes with Cream Cheese Frosting



Pumpkin Cupcakes with Cream Cheese Frosting

Makes 1 dozen cupcakes, 2 dozen mini cupcakes.

  • 1 1/2 cups + 2 Tbsp all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 2/3 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 3/4 cup + 2 Tbsp canned pumpkin puree
  • 1 tsp vanilla extract

  •  
    Frosting
  • 8 oz cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 2 3/4 cups powdered sugar
  • 1/2 tsp vanilla extract
  • candy pumpkins, for topping

  •  
    Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking powder, baking soda, salt cinnamon, nutmeg and ginger for 20 seconds, set aside.
     
    In the bowl of an electric stand mixer, whisk together granulated sugar with brown sugar until no lumps remain. Add canola oil, set mixer with paddle attachment (one that scrapes the bowl is preferred otherwise stop and scrape bowl occasionally throughout entire mixing process) and blend mixture on medium speed until well combined. Mix in eggs one at a time, beating well after each addition. Mix in pumpkin and vanilla. With mixer set on low speed, slowly add in flour mixture and mix until combined, then stop mixer and scrape down sides and bottom of bowl and fold batter to ensure it is well blended.
     
    Divide batter among 12 paper lined muffins cups, filling each about 3/4 full and adding a heaping 1/4 cup batter to each well. Bake in preheated oven 20 - 24 minutes until toothpick inserted into cupcake comes out clean. Cool in muffin tin several minutes then transfer to a wire rack to cool completely before frosting.
     
    For the cream cheese frosting:
    In the bowl of an electric stand mixer fitted with the paddle attachment, whip together cream cheese and butter until smooth and fluffy. Mix in vanilla and powdered sugar and whip until light and fluffy (at this point I recommend freezing or chilling frosting in refrigerator for a bit, returning to mixer and stirring occasionally, for a more stable consistency). Pipe or spread frosting over cupcakes then store in refrigerator in an airtight container. Bring nearly to room temp before serving. Top with candy pumpkins, if desired.

    Sugar Cookie Dip



    Sugar Cookie Dip

    Makes about 2 cups.

    Wow.  I could eat WAAYYY too much of this.
    Inspired by: Cooking with Christine and My Honeys Place

    1 package sugar cookie mix
    1 (8-oz.) block cream cheese, softened
    1/2 stick (4 oz.) butter, softened
    1 T. flavored coffee creamer (I used brown sugar and vanilla flavor)

    Combine all ingredients with a mixer or efficiently by hand.
    Refrigerate until ready to serve.
    Serve with pretzels, vanilla wafers, animal crackers, or whatever tickles your fancy.

    Chocolate M&M Cookie Cups



    Chocolate M&M Cookie Cups

    Makes about 30.

    Rich and chocolaty, with extra chocolate bursts from the M&Ms.

    1 c. (2 sticks) unsalted butter, softened
    1 c. sugar
    1/2 c. brown sugar, packed
    1 egg
    1 t. pure vanilla extract
    1 t. baking soda
    1 3/4 c. all-purpose flour
    1/4 c. unsweetened cocoa
    1 12-oz. pkg. M&M’s 
    Preheat oven to 350 degrees.
    In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In medium bowl, combine the baking soda, flour and cocoa. Gradually add the dry mixture to the wet, stirring until combined. Stir in the M&M’s.
    Drop by heaping teaspoonfuls into a mini muffin pan. Place baking sheet on the middle rack in oven and bake for about 10 minutes. Remove sheet from oven and let cool in pan for about 10 more minutes. Remove cookies from sheet and transfer to a wire rack to cool. Store in an airtight container.

    Sweet Potato Pie



    Sweet Potato Pie

    Makes 1 pie.

    This pie received rave reviews at Christmas dinner, so it looks like I'll be making it again and again in the future.  I adapted the crust largely from the original recipe, and that is one of the things people commented on most.  It's a primitive crust, simply pressed into the pie plate, but thick and delicious, similar to shortbread.  And even if you're tentative about sweet potatoes, you may be surprised to find you really enjoy this pie.

    Crust:
    2-1/4 c. flour
    3/4 t. salt
    2 T. sugar
    2 sticks unsalted butter

    Filling:
    2 large sweet potatoes
    2 t. water
    1/2 c. granulated sugar
    6 T. butter, melted and cooled
    2 large eggs
    1/4 t. vanilla
    1/4 t. salt
    1/8 t. ground cinnamon
    1/4 t. ginger
    2/3 c. whole milk

    Topping:
    Whipped cream


    Make crust:
    Preheat oven to 350 degrees. Melt butter in a saucepan.  Add sugar and stir until dissolved; remove from heat.  Stir in flour and salt until a dough forms.  Press into an ungreased pie plate.  Bake for 15 minutes, just to set the crust a bit.

    Make filling:
    Prick potatoes with a fork and sprinkle each with a teaspoon of water.  Wrap potatoes in aluminum foil. Place in oven and bake until tender, about 1 hour.  Remove and let cool.  Peel and puree in a food processor until smooth.  Set aside 1-1/2 cups puree for the filling.  You will not need the rest, although I use the rest since there was only about 1/4 cup leftover.

    Decrease oven temperature to 300 degrees.

    In a bowl, whisk the potato puree, sugar, butter, eggs, vanilla, salt, cinnamon, and ginger until smooth.  Add milk and stir to combine.  Place mixture in baked pie shell.  Bake for 60 minutes total.  After 30 minutes, rotate pie and increase temperature to 375 degrees.  Let cool completely.  Serve topped with whipped cream.

    Chocolate Caramel Crackers AKA "Shingles"

    Makes 1 cookie sheet.

    A classic Christmas candy, and a traditional favorite of my husband's side of the family.  They call these "shingles," and they are addicting and delicious!

    ~40 saltine crackers
    1 cup (2 sticks) butter
    1 cup brown sugar
    1/2 t. vanilla extract
    1-1/2 cups chocolate chips

    Preheat oven to 350 degrees.  Line a 11x17 baking sheet completely with foil and then line the base of the foil with parchment paper; cut to fit.

    Line the bottom of the baking sheet with crackers, covering all parts.

    In a saucepan, melt the butter and brown sugar together.  Stir over medium heat until it begins to boil.  Once it has begun boiling, let it boil for about 3 minutes, stirring constantly.  It will thicken a bit as it cooks.  Remove from the heat and add vanilla.  Quickly pour over crackers and spread it around to completely cover the crackers.

    Bake for 15 minutes, watching carefully so that it does not burn.

    Remove from oven and immediately cover with chocolate chips.  Let stand for 5 minutes and then spread the chocolate chips over the crackers.  Once completely cool -- speed the process up by putting the pan in the freezer -- break into pieces and store in a container.  We enjoy keeping these in the freezer and eating them straight from there!

    Oatmeal Peanut Butter and Chocolate Chip Bars



    Oatmeal Peanut Butter and Chocolate Chip Bars

    Serves 24.

    Adapted from: Kroger brand Old Fashioned oats container

    1 c. butter (2 sticks)
    1 c. sugar
    1 c. brown sugar
    2 eggs
    1 t. vanilla
    1 t. salt
    1 t. baking soda
    2 c. flour
    3 c. old fashioned oats
    1 bag peanut butter and chocolate chips

    Preheat oven to 375 degrees.

    Cream butter and sugars.  Beat in eggs and vanilla.  Mix in dry ingredients (salt, baking soda, and flour).  Stir in oats and chips.

    Pour into a greased 9x13 pan.  Bake for 20-24 minutes or until just starting to set in the middle and turn golden brown.

    Pumpkin Snickerdoodles



    Pumpkin Snickerdoodles

    Makes about 4 dozen.

    Oh so fluffy, and perfectly pumpkiny.  Welcome, fall cookie.

    2 3/4 cups all-purpose flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon pumpkin pie spice
    1 3/4 cups sugar, divided
    2 sticks unsalted butter, softened
    1 large egg
    3/4 cup pumpkin puree
    2 tablespoons ground cinnamon

    Adjust the oven racks to the upper-and lower-middle positions and heat the oven to 400 degrees F. Line two baking sheets with parchment paper; set aside.
    In a large bowl, whisk together flour, cream of tartar, baking soda, salt and pumpkin pie spice; set aside.
    In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and 1 1/2 cups sugar at medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the egg and beat at medium speed until combined, about 30 seconds. Add the pumpkin puree and beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed.
    Place the remaining 1/4 cup sugar and cinnamon for rolling in a shallow bowl. Roll a heaping tablespoon of dough into a 1½-inch ball, roll the ball in the sugar mixture, and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart.
    Bake the cookies, one sheet at a time, until the edges are set and just beginning to brown but the centers are still soft and puffy, 10 to 12 minutes, rotating the baking sheet halfway through baking. Cool the cookies on the baking sheets about 5 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.
    Recipe Notes:
    The dough can be made through step 3 and either covered tightly with plastic wrap and refrigerated for up to 3 days or frozen.
    To freeze the cookie dough, portion into individual balls, roll in the cinnamon and sugar, and freeze on a parchment- or wax-paper-lined plate (don't let them touch or they will fuse together) until completely firm, 2 to 3 hours. When ready to bake, reduce the oven temperature to 300 degrees and increase the baking time to 17 to 22 minutes.

    Caramel Apple Streusel Pie



    Caramel Apple Streusel Pie

    Makes 1 pie; Serves 8-10

    Probably the best apple pie I've ever made.  Will make again and again.

    Mimo's Pie Crust:
    1 stick butter
    2 T. sugar
    1 cup flour



    Filling:
    6 cups apple chunks (I used 6 granny smith apples here)
    1/2 cup brown sugar
    2 Tbsp flour
    2 tsp cinnamon
    1/4 tsp allspice
    1 tsp vanilla
    1 Tbsp lemon juice



    Caramel Sauce:
    4 T. butter
    3 T. brown sugar
    2 T. heavy cream
    2 t. vanilla
    1/2 c. caramel ice cream topping


    Streusel Topping:

    1/3 cup plus 1 tablespoon unbleached all-purpose flour
    1 tablespoon superfine sugar
    1 tablespoon light brown sugar
    1/8 teaspoon ground cinnamon
    2 1/2 tablespoons unsalted butter, melted
    1/8 teaspoon pure vanilla extract

    For pie crust:

    Heat butter in a saucepan until melted.  Add sugar and mix until sugar dissolves.  Remove from heat.
    Stir in flour until fully combined.  Pat into pie pan.  


    For filling:
    Preheat oven to 425 degrees. Prepare dry ingredients in a large bowl, set aside. Core, peel, and slice apples. Transfer into large bowl with dry ingredients. Top off with vanilla and lemon juice. Toss to coat apples well. Set aside while you prepare caramel sauce.

    For caramel sauce, start by melting your 4 Tbls of Butter in a large saucepan.  Then add in the 3 Tbls of brown Sugar, Heavy Cream, and Vanilla and cook for 3 minutes over medium low heat constantly stirring.  Add in 1/2 cup of Caramel ice cream topping or sauce into your homemade sauce and stir to combine. 

    To this delicious caramel sauce, add in your apple mixture and stir to combine.  Pour apple filling into pie crust.

    For streusel topping:
    Combine the flour, superfine sugar, brown sugar, and cinnamon in a small bowl. Stir the melted butter and vanilla together in another small bowl. Gradually stir the butter mixture into the flour mixture, just until evenly moistened (you may not need all of the butter). Squeeze the mixture in your hands until thoroughly combined. Crumble the mixture in the bowl to make fine crumbs with some small lumps.

    Top pie with streusel topping.  Cover loosely with foil.  Bake at 425 degrees for 20 minutes, then reduce heat to 375 and continue baking for an additional 35 minutes.  Cool and enjoy.

    Seven Layer Bars with Pumpkin



    Seven Layer Bars with Pumpkin

    Serves 16-24, depending on how you cut them.

    This recipe is as delicious as the original, but the pumpkin layer makes it perfectly autumnal.
    Slightly adapted from: Vanilla Sugar

    Pumpkin layer:
    1 egg
    8 ounces of plain pumpkin puree
    ½ ts pure vanilla extract
    a few dashes of cinnamon
    a few dashes of pumpkin pie spice

    1 ½ - 2 cups crushed graham crackers (depending on how thick you like the crust)
    12 tbsp. unsalted butter
    ¾ cup chopped pecans (or walnuts, I omitted the nuts entirely)
    1 cup semisweet chocolate chips
    ½ cup white chocolate chips
    ½ cup butterscotch chips (I didn't have these, so I chopped up caramels to use instead)
    ¾ cup sweetened flaked coconut, toasted (optional to toast, I did not)
    1 (14-oz.) can sweetened condensed milk

    Preheat the oven to 350° F. 

    Heavily spray with nonstick or line a 9 or 10-inch cake pan with parchment paper or aluminum foil.  If using parchment or aluminum make sure to spray that too with nonstick cooking spray. 
    Melt the butter over medium heat; add in the graham crumbs, and mix well.

    Using your fingers or a spatula spread crumbs into pan, making sure to get all the edges. If you want to prebake this for 10 minutes to help it get crisp then go ahead. 

    In a small bowl mix the pumpkin puree with the egg; add in the vanilla extract and as much spice as you want. I did about 4 shakes of cinnamon and 2 shakes of pumpkin spice.  Then place a layer of the pumpkin mixture on top of the graham.  Do not spread the pumpkin mixture to the edges —you don’t want it to seep out.

    Then add the layer of pecans, chocolate chips, white chocolate chips, butterscotch chips, and toasted coconut.  Next pour the condensed milk evenly over the entire dish. 

    Bake until the top is golden brown and mixture is set in the middle (no jiggly), about 25-28 minutes. 

    Cool on a wire rack for a couple hours.  I then put mine in the fridge to help it firm up to make the slicing much easier. Remove the bars from the pan.  Then using a very sharp knife, cut into bars.  If the slicing is sticky, it helps to wet the knife with warm water.

    It’s best to store this in the fridge. Keeps about 2 days then it gets soggy.

    Melt in Your Mouth Lemon Bars

    Serves 24.

    I got lazy and didn't end up making the frosting that is supposed to lay overtop of these bars.  Instead, I just sprinkled them with a healthy dose of powdered sugar.  Please reference the link below for the frosting recipe, or keep them classic (and easy!) and just do what I did.

    Crust:
    2 cups all-purpose flour
    1 cup softened butter
    1/2 cup powdered sugar

    Filling:
    4 eggs, whisked
    2 cups sugar
    4 T. flour
    6 T. lemon juice

    Preheat oven to 350 degrees.

    Mix crust ingredients and pat into the bottom of a greased 13x9 baking dish.  Bake for 15 minutes.

    As crust is baking, combine filling ingredients.  Mix well.  Pour filling over crust and bake for 25 additional minutes.

    Let bars cool completely, then cut and serve.

    Lime Sherbet Dessert



    Lime Sherbet Dessert

    Serves 20+.

    A refreshingly cool dessert.  The salty crust pairs perfectly with the sweet, sour sherbet.  Make it one last time during your own local Indian Summer.

    1 1/2 C. Ritz Crackers, crushed
    4 Tbsp. Sugar
    7 Tbsp. Butter, melted
    1.75 quart Lime Sherbet
    1.75 quart Vanilla Ice Cream or Frozen Yogurt
    4 Tbsp. Lemon Juice
    1 C. Sugar
    2 Eggs, beaten
    6 Tbsp. Butter

    Mix crust ingredients together in a small food processor. Once crumbly, press into a 9x13'' pan. Next, soften the lime sherbet and vanilla ice cream. Stir together in a large bowl (or I'm sure a stand mixer with the paddle or bread hook attachment would work fine on the lowest speed). Once combined, pour over the crumbs and put into the freezer. Meanwhile, make the lemon curd topping by cooking the lemon juice, beaten eggs, and butter in a small saucepan. Stir, while cooking over medium-low heat, whisking continuously until a low boil (about 10 minutes). Whisk for another 5 minutes and remove from heat; let cool (important). Pour the lemon curd over the ice cream; cover and freeze (best if frozen overnight). Let stand a few minutes before serving squares of this icebox dessert.

    Peanut Butter Cup Cookie Dough Crumble Bars



    Peanut Butter Cup Cookie Dough Crumble Bars

    Makes 16 bars.

    These were absolutely, positively delicious.  From now on, I will make a double batch and bake them in a 13x9 because one 8x8 pan is not enough!

    • 1/2 cup unsalted butter, melted (1 stick)
    • 1 large egg
    • 3/4 cup light brown sugar, packed
    • 1/4 cup granulated sugar
    • 1 tablespoon vanilla extract
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • pinch salt, optional and to taste
    • 1 heaping cup mini Reese's Peanut Butter Cups (or diced full-size cups; or substitute with another type of diced candy bar such as Snickers, Milky Way, Butterfinger, Heath, Rolos)
    • about 1/2 cup sweetened condensed milk (just slightly more than half of one standard 14-ounce can)
    1. Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
    2. In a large microwave-safe bowl, melt the butter, about 1 minute. Allow the butter to cool momentarily so you don't scramble the egg. Add the egg, sugars, vanilla, and stir or whisk vigorously to combine, for about 1 minute. Add the flour, baking soda, optional salt and stir until just incorporated. Batter will be quite thick and dense.
    3. Reserve 1/2 cup batter; set aside. Turn remaining batter out into prepared pan, smoothing it lightly with a spatula. Evenly sprinkle the peanut butter cups over the batter. Pour sweetened condensed milk over the top (just eyeball slightly over half of the can as you're slowly pouring). Using your fingers, lightly crumble the reserved cookie dough over the top in irregular, marble-sized chunks.
    4. Bake for about 30 minutes, or until a toothpick inserted into the center comes out without cookie dough batter clinging; it may not be clean because you're going through other layers and you may have to peck around to find a testing place). Edges will be firm, raised, and golden. The sweetened condensed milk should nearly be set in all places, and possibly only a little jiggly in the very center of the pan. Bars will firm up more in pan as they cool.
    5. Allow bars to cool in pan for at least 3 hours before slicing and serving. Lift out using the foil overhang. I recommend cooling for 1 hour on the counter, and at least 2 hours in the refrigerator, or overnight. This ensures clean, pretty cut marks. If you don't care about that, bars may be consumed as soon as they are cool enough to eat; grab a spoon and dig in. Extra bars will keep airtight at room temperature for up to 1 week, or in the freezer for up to 3 months.

    Cadbury Mini Egg Blondies



    Cadbury Mini Egg Blondies

    Makes one 8x8 pan.

    Okay, these were amazing.  I will use this blondie recipe as my base for future blondies, changing up the mix-ins as desired.  Don't get me wrong, the mini eggs were wonderful, but I don't want to limit myself in the future.  :)

    2 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    3/4 cup unsalted butter, softened
    1 cup packed brown sugar
    1/2 cup white sugar
    1 tablespoon vanilla extract
    1 egg
    1 egg yolk
    2 cups milk chocolate mini eggs (I used one bag of Cadbury mini eggs and it seemed less than 2 cups, but it was plenty)


    In a medium sizes mixing bowl sift flour, baking soda and salt together.

    Cream together butter and sugars.  Add in vanilla and eggs mix until creamy.  Slowly add in flour mixture until it is incorporated.  Fold in Mini Eggs.

    Spread batter into a greased 8×8, 9×9, or 11×7 baking dish.
    Bake at 325 for about 40 minutes or until a tooth pick is inserted in the center and comes out clean. 

    ***I baked mine in an 8x8 pan, at 350 for 30 minutes.

    Let the bars cool for 30 minutes before slicing.

    Peanut Butter Toffee Cheesecake Brownies



    Peanut Butter Toffee Cheesecake Brownies

    1 box (19.5 oz) Pillsbury® Chocolate Fudge Brownie Mix 1/2 cup Pure Vegetable Oil 1/4 cup water 2 Eggs 1 package (8 oz) cream cheese, softened 1 can (14 oz) Sweetened Condensed Milk 1/2 cup Creamy Peanut Butter 1 bag (8 oz) Heath® milk chocolate toffee bits 1 cup milk chocolate baking chips 3 tablespoons whipping cream 

    Heat oven to 350°F. Lightly spray 13x9-inch pan with Crisco® Original No-Stick Cooking Spray.In medium bowl, stir brownie mix, oil, water and eggs 50 strokes with spoon. Spread batter in pan; set aside.


    In large bowl, beat cream cheese with electric mixer on medium speed until fluffy. Add milk and peanut butter; beat until smooth. Stir in 1 cup of the toffee bits. Spoon mixture over batter; spread evenly.Bake 30 to 40 minutes or until cheesecake layer is set and edges are light golden brown. Cool on cooling rack 30 minutes. Refrigerate 40 minutes.


    In small microwavable bowl, microwave chocolate chips and cream uncovered on High 40 to 60 seconds or until chips are melted; stir until smooth. Spread over cheesecake layer. Sprinkle with remaining toffee bits. Cool completely, about 1 hour. Store covered in refrigerator.

    Banana Cupcakes with Cream Cheese Frosting



    Banana Cupcakes with Cream Cheese Frosting

    Makes 24.

    These are easy and always a hit.  Such a great cupcake!

    1 yellow cake mix
    1 box instant banana pudding
    2 extra-ripe bananas, mashed
    4 eggs
    1/4 c. canola oil
    1 c. water

    Preheat oven to 350 degrees and prepare muffin tins by filling with liners.

    Mix all ingredients; beat to combine well.  Fill muffin cups, 3/4 full, and bake for 18-20 minutes until beginning to become golden brown and a toothpick comes out clean.

    Let cool for a few minutes in the pan, then cool fully on a wire rack.

    Cream Cheese Frosting


    8-oz. block cream cheese, softened
    1/2 stick butter, softened
    2 t. milk
    1 t. vanilla
    4 c. powdered sugar

    Beat cream cheese, butter, milk and vanilla in medium bowl with electric mixer on low speed until smooth.
    Gradually beat in powdered sugar on low speed, 1 cup at a time, until smooth and spreadable.
    Frost cupcakes.

    Lemon Cupcakes with Raspberry Buttercream



    Lemon Cupcakes with Raspberry Buttercream

    Makes 24-28 cupcakes.

    Mmmm, a perfect cupcake for spring.  Dense lemony cake with raspberry frosting.

    1 cup butter, softened
    2 cups sugar
    3 eggs
    4 teaspoons grated lemon zest
    4 tablespoons of lemon juice
    1 teaspoon vanilla extract
    3 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    2 cups sour cream

    In a medium bowl combine the flour, baking soda, baking powder, and salt. In a separate mixing bowl, cream the butter and sugar. Beat in the eggs, one at a time. Add the lemon zest, lemon juice and vanilla; mix well. Add the flour mixture to creamed mixture alternately with sour cream (batter will be thick). Fill greased or paper-lined muffin cups 3/4 full with batter. Bake at 350 degrees F for 22-30 minutes or until a toothpick inserted near the center comes out clean. 
    Cool completely.


    2 sticks butter, softened
    1 tsp vanilla extract
    1/3 cup raspberry jam
    pinch of salt
    6 cups powdered sugar
    2-3 tablespoons milk


    Beat butter and vanilla until creamy. Mix in raspberry jam and salt. Add powdered sugar 1 cup at a time, beating until combined. Add milk 1 tablespoon at a time until you reach desired consistency.


    Garnish with fresh raspberries, if you'd like!

    Snickerdoodle Blondies



    Snickerdoodle Blondies

    Serves 20-24.

    A great twist on a classic.  YUM!
    Slightly adapted from: Lovin' From the Oven

    2-2/3 c. AP flour
    2 t. baking powder
    1 t. cinnamon
    1/4 t. ground nutmeg
    1 t. salt
    2 c. brown sugar
    1 c. softened butter
    2 eggs, at room temperature
    1 T. vanilla extract
    1 T. white sugar
    1 t. cinnamon

    Preheat oven to 350 degrees.  Lightly grease a 9x13 pan.  Combine flour, baking powder, 1 t. cinnamon, 1/4 t. nutmeg, and salt.  Set aside.

    In a large bowl, beat together butter and brown sugar for 3-5 minutes.  Add in the eggs one at a time, then the vanilla, and beat until smooth.

    Stir in flour mixture until well blended.  Spread evenly in prepared pan.  Batter will be thick.  Combine the 1 T. white sugar and 1 t. cinnamon in a small bowl, evenly sprinkle over the top of the batter.

    Bake 25-30 minutes.  Cool before cutting.

    Chewy and Fluffy Chocolate Chip Cookies

    Makes about 3 dozen.

    Cornstarch is the "secret ingredient" in this recipe, and I must say, it really does make a difference!  These cookies came out tall and fluffy (but still moist, dense, and chewy) just like the blogger said they would.

    3/4 c. unsalted butter, softened 
    3/4 c. brown sugar 
    1/4 c. granulated sugar 
    1 egg 
    2 tsp. vanilla extract 
    2 c. all purpose flour 
    2 tsp. cornstarch 
    1 tsp. baking soda 
    1/2 tsp. salt 
    1 c. bittersweet chocolate chips

    Preheat oven to 350 degrees F.

    In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

    Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.

    Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

    Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.

    Chocolate Chunk Blondies



    Chocolate Chunk Blondies

    Makes about 20 bars.

    Delicious and gooey and rich and dense.  It's hard to stop eating these!  The original recipe calls for 100% chocolate chunks, but I opted to use white chocolate chips for half.
    Slightly adapted from: Ina Garten

    2 stick unsalted butter, at room temperature
    1 c. light brown sugar, lightly packed
    1/2 c. granulated sugar
    2 t. pure vanilla extract
    2 extra-large eggs, at room temperature (I used 2 large eggs plus 1 large egg white)
    2 c. all-purpose flour
    1 t. baking soda
    1 t. salt
    1-1/2 c. chopped walnuts, optional
    1-1/4 lbs. semisweet chocolate chunks (or a combo of white and dark)

    Preheat oven to 350 degrees.  Grease and flour a 13x9 baking pan.

    In the bowl of an electric mixer, cream butter, brown sugar, and granulated sugar on high speed for 3 minutes, until light and fluffy.  With the mixer on low, add the vanilla.  Then the eggs, one at a time, mixing well.

    In a small bowl, sift together the flour, baking soda, and salt.  With the mixer still on low, slowly add the flour mixture.  Do not beat.  Fold in walnuts and chocolate.

    Bake for 30 minutes.  Do not overbake!  A toothpick may not come out clean; that's okay.  Cool completely in the pan and then cut into bars.

    Cake Mix M&M Bars



    Cake Mix M&M Bars

    Makes about 20 squares.

    An easy, tasty treat.  I think this would also taste great with white chocolate chips or sprinkles in place of the M&Ms.

    1 box yellow cake mix (I used Betty Crocker)
    1 small box instant vanilla pudding
    1/4 cup water
    3/4 cup vegetable oil
    2 eggs
    1 cup M&M's 



    Preheat your oven to 350 degrees.
    Combine cake mix, pudding, water, vegetable oil, eggs and chips or M&M's in large bowl.
    Pour the batter (it's going to be thick) into a greased 9x13 baking dish. I sprayed my dish with nonstick cooking spray which worked well.
    Bake your bars for 25 minutes.
    It may look sort of raw in the middle but if the edges are just golden and starting to get crispy, it's probably perfect.
