Fresh Mexican Salad with Chicken


Fresh Mexican Salad with Chicken

Serves 2-4.

A deliciously light recipe that's perfect for summer lunches or a light dinner out on the patio.  And it's make-ahead, which everyone loves.

1 chicken breast (about 1/2 lb.), cooked and chopped
1 large tomato, chopped
1 avocado, chopped
1 green pepper, chopped
1 small red onion, diced
1 can black beans, drained and rinsed
Juice from 1 lime
1/2 t. cumin
Salt and pepper, to taste
Salsa, for serving



Combine all ingredients. Mix well. Serve with salsa.
